smothered burritos

i don't remember where i got this recipe, but we give it a 9. it's so yummy, even better is if your family is relatively small you can get two nights of meals out of it, we just eat one that night and freeze the other pan for another night. i added the green enchilada sauce and it's was amazing. plus, they come together really quick!

smothered burritos

1 lb. hamburger
1 pkg taco seasoning
2 tbsp. water
1 can chopped green chilies
10-12 flour tortillas (soft taco size)
1 can ranch style beans – mashed
2 cups grated cheddar/jack cheese
1 can mild red enchilada sauce
1 can green enchilada sauce – optional

preheat oven to 350 degrees. mix taco seasoning and water to beef and cook until water has evaporated. remove from heat and add green chilies. mash beans until you get a refried bean texture. fill one tortilla with meat, beans and cheese. roll and lay in greased casserole dish. after dish is full, pour enchilada sauce over burritos. add any leftover meat and cheese for topping. cover with foil and bake for 30-40 minutes. can also be prepared earlier in the day and left in the fridge until ready to cook.
